You may have heard me refer to my happy food at some point, well peanut butter is one of those things that make me happy too.

Yes, it’s high in fat so you need to watch how much of it you’re eating, but at the same time, it’s also good protein.

The other day I decided to try protein pancakes – well I was pleasantly surprised by how good they are. Needless to say, you can’t cover them in cinnamon sugar so I sprinkled a little xylitol mixed with cinnamon and then squeezed some raw peanut butter into them, rolled them up and enjoyed every bite.
